You need to add them to the 10.8 kilos and not take them off. It’s more than in the beginning.
Once accepted:
10.8 kilos – 10%
10,8 – 1.08? = 9,72
9.72 – 18%
9,72- 1,7496? = 7,970

Of course, this is also different (and even easier). Instead of S, you can deduct the 10 and 18 percent that also add on the other side:
S = 10.8 kg * 1.1 * 1.18
It is also different, but this is the easiest and also the best way.

So you want to know how much kilos of pork you need to get after the 10% and then 18% the 10.8 kg (60* 180g).
So it applies:
S * 0.9 * 0.82 = 10.8kg
(S = the amount of pork before the withdrawal of 10 and 18 percent)
You can change this to S:
S = 10.8kg: 0.9 : 0.82 ≅ 14.6kg

I am doof. 60 * 180g = 0.9 * 0.82 * Start weight. If you change after the starting weight, you should get your 14.6 kg.
thanks for the answer. The problem is that I need 10.8 kilos of pig fillet for 60 people. After cutting (10%) and cooking (18%), I still have 7.97 kilos out. But how much kilos do I have to buy to have 180gr for every guest? The result I had called, how comet there? (14,634 kg)
