Grundsätzlich wäre das schon möglich, statt Zucker Bananen in den Teig zu geben. Allerdings verändert das dann auch die Teigkonsistenz beim Backen.

ABER Bananen haben ja nun doch eine ganze andere Konsistenz und Stärke, bin mir nicht sicher, ob dein Kuchen dann noch so wird und es ausreicht, alle anderen Zutaten genug zu süßen.
Würde ich also nicht machen.
