Changing jobs after a short time: Is it legitimate if a better offer comes along?

I am currently in a very difficult decision-making situation and hope for your help.
I work in the security services industry and have been looking for a new challenge for five months after being laid off by my former employer.
I've been in the application process at a company for almost three months, but I've been repeatedly put off and sometimes even ignored for weeks. After the branch manager of location X became aware of me due to the last-minute departure of an employee by the regional manager, things suddenly moved faster, and we got along well.
Now I've finally received a contract offer: €3,850 gross per month, plus €41.00 gross per on-call shift (telephone availability), and a company car including personal use. However, I was only informed during the last interview that part of the salary is performance-related (10% margin) – something that was never mentioned before. Sickness, contribution margin, and costs incurred through things like employee training all play a role. If costs are too high, my salary would decrease.
Additionally, I would have to finance a second home for this job, which would significantly increase my monthly expenses.
On the other hand, I have a second job offer: €4,250 gross per month plus €200 on-call allowance (telephone availability), for a total of €4,450 including a company car and personal use. However, this would require a high level of travel, as I would be responsible for three large locations for a mail-order company and would have to stay in a hotel three to four days a week. Travel days count as working hours (Mon-Fri). Working from home would be possible here, but not in the first job.
In Job 1, I would have a team around me, whereas in Job 2, I would be completely on my own but would have more freedom of action. The difference between the two jobs is €7,200 gross per year. To earn the same salary in the first job as in the second, I would have to stay with the company for at least two years.
Since I'm in my mid-20s and currently single, I think I could handle the commitment for two years. However, I'm concerned that the high level of travel might make it difficult to find a partner. Some people tell me, however, that the right woman wouldn't mind it for a temporary period.
Now my question: Would it be unprofessional to accept the first job and quit after a week or two if the job offer comes from the second job?
This action by the first employer makes me so angry that they kept it a secret from me the whole time.
Has anyone had similar experiences or tips on how I can best approach this situation?
My best friend said something to me that got me thinking: Boy, these are businesses. If you leave, someone else will.
I'm also concerned because the industry is relatively small and many people know each other. I have some of the people involved in my LinkedIn network and want to avoid the consequences of a quick move.

Bedenke: an employment contract can already be established orally! If you have made the first offer and you have said “Okay” orally, it has already happened. It follows that you have to terminate there legally strictly – while maintaining the notice period.
However, since employers usually have no interest in picking someone on board for 2-4 weeks, registering and working on administrative matters until the notice period is around and the person is immediately gone, it is often possible in such situations to agree on a resolution of the contract without adhering to the deadline.
And clearly, if the other offer gives you much more and is more financially worth it, then go exactly this way! You can, as a justification, lead exactly this hook that was first called you. I think it’s quite legitimate that you don’t just take such a “Oh yes, by the way…”.

If you’re good with traveling and being clear, I’d do two. Otherwise, I’d make two until you have something better.
