Is it bad if I make a potato salad at 3 p.m. the day before and it won't be needed until 6 p.m. the next day?

Good evening,

I'm hosting a barbecue on Saturday and, for organizational reasons, wanted to make the potato salad (with broth, without mayo) on Friday afternoon and then refrigerate it. Is this a problem, or will it affect the quality of the salad?

You can do that, nothing happens to the salad. It will dry you a little on the surface, but you’ll just touch it again tomorrow.

I sometimes make up to 1 kg for the whole week, the salad has to last up to five days. Use also the recipe with broth, oil and vinegar. This makes the salad easy to hold.

This is true, but I personally taste potato salad only when it is fresh and juicy. If he has already spent a day in the refrigerator, the potatoes have absorbed everything juicy and the taste also changes.
