Is this enough/too much food and is it healthy?

This is what 40g of uncooked brown rice looks like when cooked. This is currently my dinner portion. Serve with a little chili con carne or lentil stew (without potatoes).

1. Breakfast: (~7:00) 50g oat flakes or muesli, 1 small apple, 150ml milk

2nd Breakfast: At work (~11:00) A roll or two slices of whole-grain bread (~60g), one half with a slice of Gouda cheese, the other with jam. Or the whole thing with an egg, a little cream cheese or Philadelphia, and chives. Occasionally, a small handful of grapes if there's cheese (~5 grapes).

Lunch: (~3:00 PM) 60g of uncooked rice, pasta, couscous, or another grain with around 300g of chili con carne, lentil soup, or vegan bolognese. If there's no grain, then 200g of potatoes with spinach and a fried egg.

Afternoon snack: A 50g protein bar or 200g protein curd cream. Sometimes watermelon.

Dinner: (~7:00 PM) 50g of uncooked rice, millet, polenta, etc., or 200g of potatoes. If I have potatoes, I bake them with hummus and/or yogurt. If I have grains, I add them with vegetables like a letcho, and some shrimp, cod, or something similar for protein.

Not too much,

It would even be unproblematic to eat even more,do not worry so many thoughts and simply enjoy the food

I can only agree that it is difficult to say how much it is. I’ve never weighed my food, my stomach tells me when it’s full and when it’s not.

Right. If. Someone tracks his kcal, posting his food, whether it’s too much, too little or right. And it is very common with malnutrition and malice.
