Is there another (perhaps more precise) name for a horse blanket (see photo)? Perhaps there are some horse lovers among you who are familiar with this type of horse clothing. Thank you in advance!

In equestrian circles, people tend to talk about the different rugs according to their purpose. For example, fly rugs, sweat rugs, and so on.
You should be careful with verbs, though ;). If you say that the mare has been blanketed, it means that she's wearing such a blanket. On the other hand, if you just say that the mare has been covered, omitting the "ein" in front of it, then you're expressing that there might be a new baby horse in about 11 months ;).
The knacker, on the other hand, is neither the one who takes the stallion off the mare nor the one who takes off a blanket.

No, not really. It would be more precise to specify what type of blanket it is. But it's impossible to tell from the photo. Rain blanket, winter blanket…?
