Yesterday I made a sourdough starter with 50g flour and 50g warm water.
My question is whether these gray spots are normal or whether it is mold.

Try it. It should smell normal, fruity, acidic, nail varnish removers are normal.
Buy a bag of this sourdough with Rewe. You can keep it up.
