Yeah, why not. €30,000 for 2-3 shops is nothing.

1. about 12,000€ for wages
Two. About 8,000€ for rent
3. about 500€ for electricity and water
4. approx 15-60,000€ for taxes
€500,000 for the equipment
6. approx. 10-20,000€ for the products

Short estimate: 10 dates per day should be realistic, making 10 x 20 (working days) x 3 (studios) = 600 dates.

Would be 50 € per appointment. How much does that really cost?

Yes, that's realistic, but I wouldn't make up for it, because you'll soon be broke with lower sales.
