Internet speed with fiber optic connection?

We recently had a fiber optic connection installed in our basement. The empty conduits were already there from the previous owner. Now we want to connect it to the house network.
Now the question is whether we should run the fiber optic connection via ONTs and then connect the apartments to them, or whether we should buy a fiber optic router to which the fiber optic cable is connected directly. Two apartments would then be connected to this router, since we are siblings. Now the question for me is how much speed can we get with an existing copper cable in the house?
The tariff provider would provide us with 1000Mbit/s.
I would have chosen an AVM Fritzbox 5590 Fiber as my router.
For the apartment, I'd get a Fritzbox 7590 AX, but it also has a modem, which isn't really necessary. The main question is, will it even achieve enough internet speed to make such a router worthwhile?
What do you think? Is it possible to roughly say that I'm "only" getting a downstream speed of ~31.25 MB/s on the network? It seems to me that a lot of potential is being wasted even with this plan?

… if you mean an old ring wire line with “existing copper line”: zero. If you mean 8-wire Cat5e (or higher) Ethernet cable, then also the 1 Gbit/s that the fiber optic connection/fiber contract can offer.
Ok, see, the span on “copper line” is quite large in terms of this;D
Can one recognize at the cutting edge of one of the copper cables what kind of cable is?
No – you can’t recognize that. But you can assume that when the ends of the cables are not RJ45 sockets are (or a patch field) that it is also No Network cable (Ethernet cable) in the wall.

… these are — after what I find for the identifier — Cat-7 cables (CATEGORY 7 stands on it) and thus there is nothing in the way of 1 GBit/s.
These connections were set during the renovation by our electrician. I’m not in the matter.
I just went back to the cellar looking for the cables, these are still partially rolled up. It is possible to count veins at the cutting edge 8 . “DRAKA UC900 HIGH SCREEN 23 CATEGORY 7 3/FTF 4P …”. The last part is hard to see. Does that help?
In the house, if Gigabitethernet is enough. Accordingly, you need at least one Cat5e cabling. Whether the existing cabling is sufficient should be tested. Otherwise, hold new cables.
Otherwise, if you don’t want to transfer cables, Powerline would be an alternative.
