The Fritz!Box always converts it to 192.168.188.0/24. I'd like to use something else without having to connect a small receiver to the WAN.
If I do have to do this, which operating mode would it be? Bridge?

No, it is not, because the 4th item "LAN settings" disappears in operating mode and is permanently configured to the 188.0/24 range.
Your instructions are for assigning a fixed IP address to a device. However, I want to change the network address – in "existing access via Wi-Fi" mode.

And of course you can change these.
You also have to be able to change this, otherwise a Fritzbox to Fritzbox connection (VPN) would not work.
Nicht im Betriebsmodus “Vorhandener Zugang über WLAN”…. Und da verschwindet dann auch (meines Erachtens nach) die Option die Netzadresse zu ändern.
