I don't understand this iPhone optimized charging?

So optimized charging was like this: it charges up to 80% and then charges again with a delay, then it says it's fully charged at 6pm. Or I can have it charge straight away to 100%. But let's assume I let it charge up to 100% and unplug it at 85% or something, then it will break if you keep unplugging it and so on. I read that the battery or rather the cell phone wants to figure out how to charge its phone?? The rhythm, but how? Can I unplug it when it stops at 80% or when should I charge it fully? And what if it continues to charge optimized after 80% but I unplug it at 83 and use it? Then the next time it's at 90% and the next time I let it charge to 100%?? That all damages the battery, right?
