It depends. One way fits all There is no solution.

You can start with the moment you saw your horse for the first time, you can focus on yourself and start shortly before (and then write how your horse has influenced your life).

However, you can also start with a letter or the like to your horse and use DAS as an introduction to the story, which you will describe in fact.

What would be possible is that you make the whole thing like a diary.
This would be well suited for a photo book in my eyes, because you’d like to take a lot of photos, so probably go to some experiences and focus more on them.

In a flowing story this would lead to time jumps, in a diary style you simply have the different little stories you write on a few pages and then put the photos in between. (or, if necessary, even more… if you could design it as an album, for example, also pressed flowers or other small experiences of your memories. Drawings of course always go.
