How to track calories correctly?

Hello 🙂

I made my own potato chips earlier.
In that sense, just slice the potatoes (without oil!) and put them in the oven.

I weighed the weight before and after because I'm now unsure which one to track.

Weight of potatoes before oven: 288g

Afterwards —> 74g
which one do you take now???

That before. Potatoes lose only water in the oven, but no nutrients, so no calories.
