Every reptile has residual nerve impulses after death, even if the Kof is off.
Some birds also, similar videos are available with heads of chickens….what is special isn't that, so I don't see why you need to make videos of it or even pick animals for it.
Life no longer does it without a head. The movements you still see are the last nerves and muscles.
