Oat flakes are turning dark – how to store them correctly?

I have two questions regarding the storage of oatmeal.

  1. When I reopen the package and then close it with a clip, they get darker—but why? They were packaged airtight, weren't they? The internet says they're bad, but every time I ate them, I was fine.
  2. I filled a large glass container with oat flakes and placed it on a wooden shelf. There's not much air space, but there's a little room. Is that a problem? The flakes were still light in color and tasted normal.

Keep oat flakes best in a well-closing container at a cool and dry place, but not near the stove or next to the refrigerator.

I also store my oat flakes in a glass container with a screw cap. My oat flakes are not dark.

Thus, oat flakes are stored almost unlimitedly.

my cores will never become darker! in the open bag in the closet .
