Gab es im Mittelalter (Lehnspyramide) nur den König als Lehnsherr und in der frühen Neuzeit auch Fürsten als Lehnsherren?

A king gave a teaching to nobles and knights, and they were obliged to do so in return to the faithful.

On their feuds they were lords of fief, the peasants were dependent on feuds.

Today one would say privilized guards.
Legally, they had the right to use (use rights) on the fief without being owner.

No, the sense of fief was a balance of power, “no one bites the hand that feeds one” (Privileg).
The return was fiduciary, which was also “taxing”.
