Warm things expand, including air, while cold things contract. Therefore, there's a gradient where cold (more densely packed) air is, and an updraft where the heat is (the air expands, and heat rises because there's more space there). This can also be clearly observed in the field, and hang gliders and glider pilots, for example, need to be aware that there's more updraft over sunny terrain than over cool forest areas or bodies of water.
