Do you know Labskaus?

This dish is an old sailor's dish, often served offshore in northern Germany. I modified it last night and made a version without the salted meat, but with herring and a fried egg.

To do this, I cooked the potatoes, 250g per person, in one pot and 2 beetroots in another pot.

I peeled and diced the beets. I pickled half of the cubes in a sweet and sour sauce with 1/2 cup water, 1/2 cup sugar, 1/2 cup vinegar, and 1 teaspoon salt. (You can also make this 2-3 days in advance; I did it the same day.)

Then I fried an onion in a generous amount of butter in a pan. I added the unpickled beets and the previously cooked mashed potatoes. I seasoned the whole thing with salt and pepper.

On each plate, I arranged a green salad dressed with dressing, a generous portion of my meatless Labskaus, and a herring fillet. I then topped the Labskaus with a few pickled cucumbers, some of the pickled beetroot cubes, and a fried egg.

We found it very tasty and are of the opinion that Labskaus does not necessarily need meat in addition to fish and eggs.

Anything that can be grilled can also be cooked in a pan on the stove.
