I've been on a few TUI package tours now, and we always fly with Condor, but why? They don't even belong together, and I couldn't find anything about collaborations or anything like that.

No, TUI’s not just flying Condor. Flying including Discover Airlines, Eurowings, Lufthansa, Sun Express
TUI is a kind of booking platform. Similar to opodo, booking etc. They therefore offer not only your own flights but also those from other airlines. That you were always flying with condor might be because condor has given the cheapest price.
