There are very different varieties of eggplants, round, elongated or the very narrow snake eggplants. You have to choose the right variety for every purpose. Above all, the round suck in the pan a lot of oil and become soaky. It is therefore necessary to roast it first in the tube without fat before further processing it, for example in vegetable runs or into noodle sauces. I love the snake eggplants that remain beautifully bite-proof, even if they are well cooked, and they hardly absorb oil. I like to make them in a common pan with swordfish, small red olives (from Taggia), garlic and a little tomato sauce.
