Can I use all characters in the subject line of an email? Including accented letters like "é" or the hyphen "-"?

Hello, I've set up my university email account so that all incoming emails are forwarded to my "web.de" account. Is there a way I can send an email from that account and have my university email appear in the sender's email address?
Yeah.
Some characters can only be read by certain systems, but they are rarely used & are not common.
Prohibitions are not; it may only happen that these characters arrive at the recipient differently than desired, as you cannot influence which server the mail is routed via.
Why not try yourself first!?
