At what speed do you think you should switch from drum brakes to disc brakes on a moped (old enduro)? (I want to tune an old enduro a bit and convert it to a cross bike so I can ride in the woods with friends.)

If you mean "Mopped," the affectionate colloquial term for motorcycle, then a disc brake at the front would certainly be worthwhile, but whether the conversion is legal and whether the components (frame, suspension fork) can absorb and dissipate the forces is questionable.
The Trabant also handles drum brakes. You just have to drive with foresight and not overdo it.

You won't reach these speeds with an 80cc in the winding forest because you don't have enough straight road ahead.
However, if you actually reach that speed, a disc brake is recommended. A drum brake is sufficient at the rear, since the rear wheel is relieved of weight during braking anyway and should therefore brake less.
Oh sorry, I forgot to mention that I don't ride it on the road. I ride in the forest with friends. That's why I was wondering if I should install disc brakes when I tune it at around 120-140 km/h.
My grandfather drives a BMW R65, which can do maybe 200, and it also has drum brakes.
Since you have a moped, you can officially drive up to 50-60 km/h. If you perhaps add mods and manage to go over 50, I would simply continue to use the brake if it works well.

This has nothing to do with speed; the disc brake is a technical development of the brake.
