Does a trusted app also have access to account data?

Hello,

I'd like to install an app that requires my trust, or rather, I have to confirm in the settings that I trust it. ( I have an iPhone )

there comes the message with the words:

"Trust" means that all apps from this company's development team are allowed to use your iPhone and may access your data.

there I can cancel or press trust

Does that mean they can access my online banking and my passwords?

The message means that Apple has not reviewed the app and therefore they cannot assure you that this app has no fraudulent intentions.

For example, a manipulated app can intercept data you enter in the app. However, the app cannot simply access the system and then read banking data or passwords to give the app yourself.
