I see that some units have "training" battalions, such as the PzGrenLehrBtl 92, ArtLehrBtl 325, or the PzLehrBtl 93. How exactly do they differ from the "normal" units? Do they get the new equipment first, do they test it beforehand, or do they even have other tasks?

A “teach”-bataillion is used to test new equipment (e.g. SPz), to develop the basis of use with it and to train staff on new equipment already introduced.
