Configure new iPhone but not enough storage space on the new one?

I bought an iPhone 16 and now I want to transfer data from my iPhone 8. I've tried several times, but it just never works. It keeps saying that I have to completely reset the phone because the new iPhone doesn't have enough storage.

But I don't want to lose all my apps, contacts, pictures, etc.

I've deleted about 4-5 apps now and will try again in the next few days (I have to be at home for that, since it doesn't work without Wi-Fi).

Should work after deleting the apps, right?
Or what do you think, what else should I do to make this work?

Simply transfer pictures and videos to your PC. Then they’re not gone.

It’s annoying. What about Icloud? You can also save them. In doubt, take back the new cell phone and that with more memory
