I see in some YouTube videos that, just before cruising altitude, as soon as the speed in the top left corner of the PFD changes to Mach, the pilots themselves increase the vertical speed a bit. Why is this? Does this make the aircraft faster and allow you to climb faster, or what's the problem, and how can I simulate this in XP12? Thanks in advance.

In my case, I hear practically nothing for the entire flight and for at least two hours afterward. It doesn't hurt, it's just annoying. Chewing, swallowing, yawning, etc. Doesn't help at all. Should I try these earplugs for pressure equalization?
