I don’t think you can do that at Crunchyroll. Only with Ger Sub. There are some isolated animes with Ger Dub, but you need premium for it.
On the right side there is a list of the various available subtitles languages. If you click on the corresponding language, it will be set as subtitles.
You can also click on the gear in the player and then set the language under “Subtitles/CC”.

If you mean the audio language. Here you need to select the correct language on the overview page, as far as available at all.

To do this, you have to scroll down and select a different language under the heading “Languages”. In the mobile app, however, I don’t believe it, but I’m not 100% sure.
