Can you work in multiple intelligence agencies?

First of all, hi, (14f) I want to join the secret service, but I want to emigrate to Canada at some point,

So how is it then, could one theoretically quit the German secret service and switch to the Canadian one?

(My other master plan is to study medicine and psychology through the Bundeswehr, and then either trauma surgery/neurology/psychiatric medicine, or research/laboratory work. If that doesn't work out, I'll either join the police or work as a chemist. But what are the legal requirements for these professions?)

Only if one is so good in his profession and works in a division where one is in constant contact with both countries, as a jumper or official contact person. Otherwise, the conflict of interest would be too great and there is no secret service. Although there are no official conflicts between Germany and Canada at the moment, the saying is: never say.

that goes with the secret service if you work as a double agent, so for 2 countries spying, you provide both countries with secret information.

But you have to work a little bit on your spelling.
