Surely everyone already knows the letter abbreviations for allergens (A gluten-containing cereals, E peanuts,…).
But what's the system behind it? Why does B stand for crustaceans or L for celery? It seems as if someone wrote down all the allergens in random order and then randomly assigned the letters next to them. What's the system behind it?
