If they expired two days ago, can they still be used if they're put in the freezer? Or how long does it take for them to go bad?

Call the day before at the baker, which special rolls you need, whether they can bake it or how the procedere is.

If it is allowed, you can bring it.
Since most bakers don’t have: talk to people! Most are understandable and if you take hot drink, which is usually more expensive, they won’t mind.
We also have fixed prices for breakfast, so it wouldn’t matter anyway.
