How many degrees?
How hot should I set the stove if I want to cook dumplings? My stove has nine settings.
Small bubbles must form underneath the water, is that correct?

Basically, yes. If you really just want them to simmer, that doesn't even have to happen (the bubbles).
Boil the water thoroughly. Add the dumplings (they should stop boiling) and let it stand at 4/5/6. That should be enough. It also depends on how hot your stove is.
Hello,
No, that's not correct! "Drying" means the water is just simmering, meaning the surface is moving slightly, or just below it. On a ceramic hob, this should be around level 3-4! When the dumplings "dance" on the surface, they're done!
Something between 4 and 6. But it depends on the volume and fill level of the pot. As well as the altitude above sea level where you're cooking 😉
Ultimately, it is a matter of experience.
Boil water, add dumplings, and turn the heat down to 3 or 4. That's more than enough.
