Bread maker – filling quantity?
How is the filling quantity calculated in the BBA? For example, it says XL = 600 g flour. I have a recipe that calls for 500 g sourdough (made the day before). Then I add 250 g rye flour and 120 g spelt. According to my calculations, that's 870 g of flour. This doesn't include the 250 ml water, salt, a little sugar, and 10 g yeast.
Do I need to reduce the amount of flour from the recipe to 600g? Thanks for the info.
Have you ever seen the device's user manual? There are different bread baking machines with different filling quantities. After that, you should be judged.
500 gr sourdough, isn't it a bit much? Normally, sourdough is used in the amount from 150 to 350 gr.
I guess I didn't write something right there. The 500 g of ST is the foreground from the day before from 250 g of rye flour and 250 g of water plus 30 g of ST. These are then 500 g of pre-dough, from which I took 30 g of ST again for the next time.
My basic mixture (meal, salt, yeast or sourdough) I always prepare, raise it in rough glasses. Then there are some spices, kernels,… that then gives a finished bread of about 750g.
I can't do that because I use my own sourdough and also don't always want to bake the same bread.
The sourdough doesn't do that either, it just comes to a flour mixture on the baking day, I don't have to prepare white bread great and don't need a sourdough.

Without knowing exactly, it could be that the volume does not find space in the "Baking bucket" and swells.
