How do I change screen resolution in Windows 11?

I got a PC a few weeks ago that can reach up to 340 FPS, but I only have a 60 Hz monitor. Does it at least make a difference that I'm playing at 340 FPS?
For a long time now, I've always had to press ESC to start my laptop. Is there any way to change this?
Right-click an empty place of the desktop > Display settings.
If under “screen resolution” next to Resolution in addition “(recommended)”, Windows has set the optimal screen resolution for your screen/monitor. See picture example
