Can someone explain to me why glucose C6H12OH is converted into ethanol C2H5OH using a yeast enzyme?

I know that the yeast enzyme breaks down glucose into alcohol+CO2 but how do you calculate the number of C and H atoms?

Or does ethanol always come out

a yeast enzyme

This is not achieved by an enzyme, but a number of enzymes are involved.
