Can sliced ​​sweet potatoes be stored?

Here's what I did: I made some sweet fried potatoes last week. However, I cut the rather large potato into two portions (and peeled them, of course).

I then stored the second half in the refrigerator compartment.

Now, four days later, I'm planning to do these. They smell okay, look unchanged, and I don't see any problems.

Am I in the "careful!" zone regarding storage/expiration, or is this by no means a cause for concern?

I couldn't find a proper answer to this online, as it was often only about storing potatoes that had already been cooked, but not uncooked ones that had already been peeled and cut.
